Haloumi Bruschetta

This is a really nice and easy finger food type snack to make at home. All you need is some haloumi...

Lemnos haloumi

...which you can find in the cheese section of Cold Storage, NTUC Fairprice, Carrefour or Jason's. You'll also need one small onion, some bread, olive oil, rosemary and coarse black pepper.

  1. Preheat your oven to 180C.
  2. Slice your onions, cut your bread and haloumi into long strips.
  3. Oil a baking tray and then line it with your bread strips.
  4. Coat your bread strips with some olive oil.
  5. Place the onion slices on the bread strips and then top it with the haloumi.
  6. Coat the haloumi with some olive oil.
  7. Sprinkle some rosemary and pepper on each strip of bruschetta.
  8. Finally, bake for about 10 minutes.
  9. When done, serve immediately.

There are many other possibilities with this snack... you can also just make the bruschetta with just the haloumi alone without the onions or if you're feeling adventurous, try it with some other types of topping. Cumin works well with it too.
