Fruity Muffins

Fruity Muffins Baked these tonight. Healthy, fibre-filled fruity muffins. The picture could've been better but it was late so that's the best I could do. This recipe will make about 12 muffins.

180 g mixed dried fruits
225 g self-raising flour
150 g oat bran
60 g brown sugar
300 ml milk
1 egg
1 tablespoon vegetable oil
1/4 cup hot water

  1. Preheat your oven to about 180°C.
  2. Put cupcake liners into your 6-hole muffin pan.
  3. Soak the mixed dried fruit in hot water for about 5 minutes.
  4. Mix the dry contents - flour, oat bran, sugar - together in a mixing bowl. Then make a well in the centre.
  5. Next, combine milk, egg and oil in a small bowl or jug.
  6. Add the soaked mixed dried fruits and milk mixture into the dry contents.
  7. Slowly combine the contents.
  8. Fill your cupcake liners to about 2/3 full.
  9. Bake in oven for about 20 minutes.
