Cheesy Muffins

Cheesy MuffinsI have been baking more goodies with my new Delonghi EO 1850 benchtop oven. Like these cheesy muffins, for example. With this recipe you can make about 7-8 muffins. Here's what you'll need:

150 g self-raising flour
2 eggs
1 1/4 cup milk
20 g butter, melted
2-3 tablespoons grated parmesan cheese
2-3 tablespoons grated cheddar cheese
2-3 tablespoons grated mozarella cheese

  1. Preheat your oven to about 200°C.
  2. Put cupcake liners into your 6-hole muffin pan.
  3. Put your flour in a mixing bowl.
  4. In another bowl, whisk your eggs lightly and then pour in your milk and butter. Continue whisking until all combined.
  5. Pour your egg mixture into the flour.
  6. Mix until you get a smooth batter.
  7. Next, half fill your cupcake liners with the batter.
  8. Then put in a mix of the cheeses and then cover with batter.
  9. Bake in oven for about 20 minutes or until muffins are well risen.
