Orange-Cranberry Ice Cream
If you still can't tell... I am having a lot of fun with my Philips ice cream maker. Just recently, I concocted this new flavour, which is great on a hot day. Here's the recipe. It can serve up to 4 people or 2 really greedy ones:
100 g oranges
100 g cranberries
70 g castor sugar
Juice of 1/2 lemon
Some lemon zest
Some orange zest
1 egg yolk
5 1/3 fl. oz. full cream milk
1 3/4 fl. oz. cream
- Puree oranges and cranberries together with lemon juice and zest in blender. Then store puree in fridge.
- Beat egg yolk with sugar and a bit of milk (about 50 cc) until mixture is light and frothy.
- Add in cream and beat the egg yolk mixture again until all is combined.
- Gently heat up the rest of the milk in a saucepan, stirring constantly. Do not boil!
- Slowly pour the hot milk into the egg yolk mixture and stir at the same time. Make sure the mixture is properly combined and the sugar is dissolved.
- Pour egg yolk mixture into saucepan and gently heat on a low flame for about 2 minutes. Stir constantly and do not allow to boil.
- Remove saucepan from heat and let cool. To speed this process, put saucepan in a shallow pan filled with ice cold water.
- Once saucepan has cooled down, put it in the fridge.
- Assemble your ice cream maker without the cooling container as per the instructions provided with your unit.
- Take your cold orange-cranberry puree and egg yolk mixture out of the fridge.
- Mix your cold orange-cranberry puree together with the egg yolk mixture until well combined. Then put the mix in something you can easily use for pouring.
- Remove your cooling container from the freezer and insert into your ice cream maker unit.
- Switch on your ice cream maker and slowly pour in your ice cream mix.
- Let your ice cream maker operate for 45 minutes and you will soon be chomping down on this refreshing treat.
